Veggie Spy & Versatile Vegan

When does spring really start? If you see RAMPS at the Market, spring has sprung! Ramps are a type of wild onion native to Appalachia that come up in the early spring and have a short season. They have broad green leaves that look like Lily-of-the-Valley. You better know the difference if you forage them in the woods (as is typically done) because Lily-of-the-Valley  is extremely toxic!

Ramps have a strong onion/garlic flavor and a woodsy aroma. The entire plant is edible, including the small underground bulb. Although they are sometimes called wild leeks, ramps are not leeks and have a much more intense flavor. The combination of the delicate leaf texture and a bold flavor has turned the once modest green into a culinary star. They work well in salads or as a garnish, and the boldness also bursts out when they are sautéed or grilled.

Hiking into the mountains to harvest ramps from a secret patch has been a tradition in rural West Virginia for generations. Ramps take seven to nine years to produce seeds, which is a long time to keep a secret! This tradition lives on in ramp festivals that are a fixture of spring in West Virginia.  They are getting harder to find due to over-foraging, so much so that foraging ramps is banned in parts of Tennessee, North Carolina, and Canada.

The Versatile Vegan suggests trying this creative Vegan Ramp Cream Cheese, which will be perfect on a toasted Wootown bagel! You can find ramps courtesy of the busy foragers at Blue Owl Garden and Marion Mushroom!

Bite This By Annie, Booth #79, The Market Emporium

Okay creeps, the moment we have all been waiting much too long for. Previously @tudies_cookiesandsweets , Bite This will be located at 3009 N High Street in Clintonville, just south of where we got our start at the Clintonville farmers market. To say I am excited is an understatement, I cannot wait to open up that door and see all of your faces on a much more frequent basis, and have a place for my team to thrive. We have A LOT to do, but you can look forward to rotating specials only available at the brick & mortar, cake by the slice, new menu items because we’ll have more time to play in the kitchen, and some of your favorites from @budddairyfoodhall to include MommaBats Black Lemonade & Marinated Cucumbers, new side options to go with your bombs and a lot more. I cannot wait to share this transformation with y’all. And thank you from the bottom of my heart for all the support and love, I absolutely never would have imagined that in 2 years I’d be holding the keys to my own bakery. What a wild and crazy ride it has already been, and I hope will continue to be! - Love you creeps, xoxo Annie
