Find Fine Fermented Foods at the Market! 

Fermentation is a process where microorganisms like yeast or bacteria convert sugars and starches in food into alcohol or acids. This results in food being preserved for longer and gives food a distinctive zesty flavor. One of the oldest fermentation processes managed by humans was the fermentation of honey into mead, which dates to over 7,000 years ago. 

One of the major reasons fermentation has become popular during recent times is its association with digestive health. The fermentation process produces probiotics, microorganisms that have a key role in digestion and other benefits. 

Sauerkraut, which is fermented cabbage, is the food some people most associate with fermentation. The Chili Chic offers several sauerkraut flavors including caraway seed, brussels sprouts, and hot red! 

Another type of fermented vegetable is kimchi, a traditional Korean dish which is a staple of Korean cuisine. Although kimchi is not available at the market, it’s easy to make your own! Kimchi is often made from napa cabbage, but many other veggies are suitable as well. The Versatile Vegan suggests you grab some mustard greens from Franklinton and make this Quick Vegan Mustard Green Kimchi

Kombucha is a non-alcoholic  fermented and sweetened tea beverage taken primarily  for health reasons. Kombucha originated in China in 220 BC and uses double fermentation and other steps to ensure no alcohol is produced. The beverage started to gain popularity in the US in the early 1990s and is widespread today. The Market is fortunate to have two kombucha vendors. Lapp It Up sells kombucha tea and other kombucha  products such as soap and herbal items. LITT Kombucha offers the tea in both bottles and cans, and the flavor lineup includes assorted berry, ginger lemon, and tangy turmeric. 

Pickling is a process like fermentation, except the flavor is achieved by soaking the vegetable in liquid rather than a biochemical process. Crazy Cucumber offers an amazing variety of pickles – all delicious! 

Other Finds

Mayapple Farms has ginger, an item rarely seen at the Market. Visit Franklinton for spinach, bok choy, sweet potatoes, and senposai. 9N Farm has carrots and a wide variety of squash. Rock Dove has radishes, Chinese cabbage, and a variety of Asian greens. Moreland Fruit Farm has potatoes, pumpkins, and apples. Microgreens are baby veggie plants and are very nutrient dense. Get them at New Path Farm and Seven Acre Farm

Blue Owl has saffron, a delicate spice common in Persian cuisine known for its subtle flavors and its ability to turn food into pleasing shades of gold or yellow. They grow their own saffron,  a painstaking and labor-intensive process. Since a  little saffron goes a long way, it is sold in tiny jars with a few threads of the spice. The Versatile Vegan suggest you get some saffron threads and make this delicious  Chickpea and Saffron Stew.  It calls for garlic, which you can get at Foraged and Sown, and spinach available at several of our produce vendors. 

Remember there are several vendors in the south parking lot including  Gillogly Orchards (apples and pears) and Oink Moo Cluck. Can’t find a winter Market vendor? Feel free to flag down a volunteer or visit the Information Booth which is to the east of the central fountain.

MADE FROM THE MARKET

Lentil & Mushroom Stew Over Potato-Parsnip Mash

This recipe comes from Jen Thomas, one of our market volunteers, who loves to cook, and is always looking for unique recipes. She found this Lentil and Mash recipe in the dishing out health website and decided to try it. Although the ingredients list is lengthy, it comes together fairly easily. Jen was able to find potatoes at Raber Family Organics. The recipe calls for a mash of potatoes and parsnips, and it might be possible to find parsnips at the market (check Toad Hill Farm, Franklinton Farms and 9N Farm). As you’ll see, the ingredient list includes cremini and shiitake mushrooms, which can be found at several mushroom vendors (Blue Owl Garden Emporium, Marion Mushrooms, Mayapple Farms, New Path Farm). Jen used portobello and shiitake mushrooms with great results. Enjoy!

1 lb. Yukon gold or Russet potatoes, partially peeled

1 lb. parsnips, peeled

2 Tbsp. olive oil

1 yellow onion, finely chopped

8 oz. cremini mushrooms, sliced

8 oz. shiitake mushrooms, stemmed and sliced

3 garlic cloves, minced

3 Tbsp. tomato paste

½ cup dry red wine

1 Tbsp. plus 2 tsp. chopped fresh rosemary, divided

6 thyme sprigs

1 tsp. kosher salt, divided

1 tsp. black pepper

2 cups vegetable broth

2 Tbsp. flour

1 cup cooked brown lentils

2 Tbsp. lower-sodium soy sauce or tamari

½ cup milk of choice (I use unsweetened cashew milk)

2 Tbsp. butter (sub vegan butter if making dairy-free)

Cut the potatoes and parsnips into equal sized chunks. Place them into a large pot, cover with cold water, and add a large pinch of salt. Bring to a boil and simmer until the vegetables are fork tender, about 20 to 30 minutes.

Meanwhile, heat oil in a large skillet over medium-high. Add onion and mushrooms; cook until onion softens and mushrooms are golden, about 8 minutes. Add garlic and tomato paste; cook until paste turns brick red, about 4 to 5 minutes. Add wine, 1 Tbsp. rosemary, thyme, ½ tsp. salt, and pepper. Cook until wine reduces by half, about 2 minutes. Whisk broth, flour, and soy sauce in a bowl, and pour into pan. Simmer until mixture thickens, about 6 to 7 minutes. Stir in lentils, and remove thyme stems from pan.

Drain potatoes and parsnips and place back in hot pot. Add milk, butter, remaining ½ teaspoon salt, and 2 teaspoon rosemary. Use a potato masher to thoroughly mash. Divide evenly between each of 4 plates. Spoon lentil and mushroom mixture overtop. Garnish with additional herbs, if desired.
