Black Cap Hot Sauce is a potential new vendor for the 2024 outdoor market. Visit them in Booth #16 in the West Corridor.

Black Cap Hot Sauce is a 100% natural, living culture fermented hot sauce made by Jack and Nicki Moore in Columbus, Ohio.  The namesake stemmed from blind taste tests with family and friends to finalize the recipe. One unmarked test bottle had a black cap, and the other had a white cap. As taste tests began, “Black Cap” was the undisputed winner, and the product named itself!  

Our ingredient list is clean: Fresno peppers, garlic, ginger, lime zest, salt, chia seeds, and water - that's it.  We preserve the live probiotic cultures in our sauce, as well as the big, bold, funky flavor that only a living culture ferment can deliver!  We wanted to make hot sauce that is not only delicious, but good FOR us, too.  Our 100% natural ingredients are fermented in ridiculously small batches, bottled by hand, and best enjoyed with friends.

Through your support, we amplify the health and wellness benefits of creating and consuming fermented foods.  “Preserving a culture” is our mission, and that goes beyond preserving the live probiotic, gut-friendly culture in our sauce.  It extends to our sustainability practices, like sourcing local produce whenever possible, composting all food waste, and using recyclable glass bottles and metal caps.  Our living culture, small batch ferments reflect our local agricultural system, supporting local farmers and sharing our collective food journey with you.

Community table

The Ohio State University School of Horticulture and Crop Science has been working with the City of Worthington and the Worthington Deer Task Force to conduct a survey of community opinions on the presence and management of deer in the area. The survey is complete and will be disseminated at the market on Saturday, March 2. Find them in Booth #55 in front of the fireplace in the North Corridor.

MADE FROM THE MARKET

With the cold weather settling back in, there's nothing better than a hearty bowl of chili to warm you up. Make your chili even more delicious by using lean and flavorful bison meat from Green Plains Bison Ranch (Booth #1, East Corridor). Try our recipe for Bison Chili and satisfy your cravings!

Ingredients

  • 1 lb. ground lean bison

  • 1 cup chopped onion

  • 2 cloves garlic, minced

  • 1 cup chopped bell pepper

  • 2-3 Tbsp chili powder

  • 2 tsp cocoa powder

  • 2 tsp salt

  • 1 tsp dried leaf oregano, crushed

  • 1 tsp ground cinnamon

  • 1 tsp ground cumin

  • ½ tsp ground black pepper

  • ¼ tsp ground allspice

  • 2 cans (14 ½ oz. ea.) diced tomatoes and juice

  • 2 cans (8 oz. ea.) tomato sauce

  • 1 can (15 oz.) small pinto beans, rinsed and drained

  • 1 can (15 oz.) white or black beans, rinsed and drained.

Directions

Coat surface of large pan with non-stick cooking spray. Sauté bison for 3 minutes; stirring to crumble. Add onion and garlic, sauté 5 additional minutes. Mix in bell pepper, chili powder, cocoa powder, salt, oregano, cinnamon, cumin, black pepper and allspice. Cook 2 minutes. Add tomatoes, tomato sauce, beans, water and chilies. Stir to blend and simmer for 45-60 minutes. Serve with condiments such as sour cream, cilantro or cheese if desired.

Nutrients per serving: calories 251; protein 19g; carbohydrates 29g; iron 6 mg; fat 7 g; cholesterol 33 mg; sodium 1386 mg.
